The Elder's Ricey Creation Thingy.....

now bear in mind that this feeds just me, sometimes i have it all in one sitting, sometimes i freeze some to cook another day.... u'll just have to judge the amount and adjust for what u need......

Ingredients:
1 cup rice
chicken stock
onion
minced garlic
coles mixed vegies
salt and pepper to taste
butter

Method:
make up chicken stock and cook rice in it using the absorption method.

while that's coming to the boil, chop up the onion. i normally only use about half, but if u like more or less u can adapt it.

add onion to saucepan, along with 1 tsp minced garlic.

once rice has come to the boil, turn it back to the low setting and let it sit for about 10 mins. i normally add a little bit of butter here to prevent it from sticking to the bottom of the saucepan, but it can be left out.

after 10 mins, check on the softness of the rice. if it's almost done, this is the optimal time to add in the coles mixed vegies. i normally add about a cup to the saucepan, but once again, it can be altered to suit your tastes and amount. i like to have a good amount of vegies as it just makes me feel less guilty about not having proper meals more often.

mix the vegies through and let them heat up in the rice. if the rice is a little dry, add more chicken stock or just plain water. not too much, just enough to make it a little wet again.

once the vegies have been warmed through, it can be dished up. season with salt and pepper to taste.




so there ya go. pretty quick, pretty easy, and it's all done in one pot. it's pretty healthy and it tastes bloody good too!

plus i eat it with chopsticks, so it's also fun. and even Jawsome has commented that it smells good. so that's something i guess..... considering how much he hates vegies.

feel free to take the recipe and alter it to your tastes and throw in extra vegies that aren't in the mix. maybe even add in chicken or fish. it all depends on what u like.

sounds yummy. makes me wish i could eat rice again...*sad sigh*

i used to love the rice-a-risso stuff your dad cooked. wicked!

tried sushi recently. was pleasantly surprised, but found i can eat only one roll... because of the rice.
